Minnestrone Soup
Ingredients:
4 cups water
4 cups chicken stalk
1 cup sliced carrots
2 cups chopped bok choy
½ cup diced potatoes
½ cup chopped celery
1 can mixed beans
½ cup green beans
2 cups diced butternut squash
2 cups stewed tomatoes
Salt and pepper
1 tsp parsley
Instructions:
Bring liquid to boil. Add carrots, potatoes, celery and stewed tomatoes and cook for 1 hour. Add bok chow, squash and beans and cook for an additional ½ hour. Add salt, pepper and parsley to taste and serve with sprinkled Parmesan cheese.
